The variety used features large, developed caps, making it easy to reshape and use in daily cooking.
Let soak in water for 30-45 minutes.
Remove any tough stems.
Slice if desired.
Cook with grains, fried potatoes, vegetables, and soups.
For a delicious broth, boil some shiitake and soaking water with some kombu sea vegetables for 15 minutes, then season with shoyu or tamari and mirin to taste.
